Synopsis
Defines the concept of protein quality and describes its importance in the correct feeding of pigs and poultry. Considerable attention is given to the measurement of protein quality, by both biological and chemical methods, and to recent work which has aimed to improve the quality of certain feeds, such as cereals, and of whole diets. Some reference is made to the relevance of protein quality in human nutrition.
