- Discusses the steps in the food development process and follows the development of three food items: 1) a reduced-fat muesli bar: from the laboratory recipe, market research, small-scale trial manufacture; 2) high-fibre white bread: a rare breed of maize is grown for its ‘hi maize’ fibre that is extracted in the mill and added to white bread; 3) healthy canola-oil margarine: uses imported canola (rapeseed) oil, which is a source of omega-3 fatty acids.
