- Synopsis
- Looks at some new developments in the food industry starting with single cell proteins from mineral oil and leaf protein from lucerne. Compares the economics of producing these materials for animal feed with traditional feedstuffs such as soya and fishmeal. Considers the use of textured soya as a meat analogue from the point of view of commercial companies efforts to market the product and economic advantages of using soya to institutonal catering such as school meals. The problem with soya is that it is not grown in Britain, but if soya can be texturised then other things like single cell protein can also be texturised. Discusses the possibilities of using both single cell protein and leaf protein for human foods.
