"They have a handy way of emptying the kettles after the syrup has boiled just so, and then cooled ..."
"The syrup, hardening as it grows cold, is mixed and thoroughly "worked" in a machine built on the principle of a bread-dough mixer."
"The cream is ready for the beater after half an hour in the mixer. And it’s heavy to handle!"
"The cream filling is used in many ways, according to the type of sweet. In making bon-bons, it is the heart of the sweet; the outer coating is put on by hand-dipping."

"Maraschino cherries are turned out by the thousands - almost entirely by machine. A hard mould, made of specially prepared starch, received the first dab of cream."
